I use to LOVE Butterfingers. I’m not sure why because I don’t like chocolate. I know, it’s a little weird for a female not to like chocolate. When I tell people this I get the side eye. lol I love peanut butter! I think that’s what made me enjoy Butterfingers. I can sit up and eat out of a jar of peanut butter with some crackers as a snack anytime. Yummy!
Somehow, I stumbled across a Vegan Butterfinger recipe on YouTube. I decided to give it a try. Now that I am writing this post I can’t find the video. Good thing I saved the recipe.
Funny but as soon as I tasted the Enjoy Life chocolate chips I wasn’t a fan. lol I continued to make the recipe though. The peanut butter helped things out. During the time I wanted to make these I didn’t have a food processor yet so I used my blender.
Vegan Butterfingers
Yield: 16 mini bars or 8 large candy bars
Ingredients
1 cup chunky salted peanut butter
15 Medjool dates
3 cups corn flakes
2 tbsp maple syrup
12 oz non-dairy chocolate chips
Instructions
Crush the corn flakes in a medium sized bowl. Set aside 1/2 cup of corn flakes for garnish. Add dates, peanut butter and maple syrup to a food processor. Process until smooth then transfer to the bowl of corn flakes. Fold the peanut butter mixture into the corn flakes and stir until even.
Pour the mixture into a loaf tin lined with parchment paper. Use a spatula to level off the top. Freeze for four hours or overnight. When the peanut butter bars are firm, remove them from the tin and cut them into bars.
Melt the chocolate chips in a small sauce pan or glass bowl in the microwave. Add a few tablespoons of coconut oil or non-dairy milk to thin it out, if desired. Carefully coat each candy bar in chocolate and top with sprinkled corn flake pieces. Freeze again for 30 minutes.
Best served right out of the freezer.
My bars came out a little crumbly after freezing overnight. Maybe I needed to freeze them longer or soak dates to soften before adding to mix?? First time trying things don’t always come out perfect. I thought they were good. Took me a couple days to get used to the chocolate flavor. lol
