Tonight I made Granola Breakfast Cookies. I love these cookies! I had to restock my supply. LOL Most mornings I eat two cookies and a banana. These cookies keep me full through the morning. I’m not full where I can’t stand it. I’m full enough where I don’t snack throughout the morning. I came across this recipe in a vegetarian cookbook that I have. I went to a vegetarian cooking class with one of my good friends from my old job and we were given this book. Since the first time I made them I haven’t stopped. My husband and I became vegetarians this year so I’ll be using this cookbook more often.
GRANOLA BREAKFAST COOKIES
-2 cups quick oats
-1 cup whole wheat flour
-1/4 cup soy flour
-1/4 cup milk (I use coconut milk)
-1/4 cup wheat germ
-1/4 cup flaxseed
-1/4 cup rye flour
-1/2 cup brown sugar
-1/4 cup honey
-1 tsp. salt
*Mix all together
-1/2 cup oil
*Drizzle over dry all ingredients above and mix thoroughly for about 5 minutes. Let stand 1/2 hour or overnight in the fridge.
-1/2 cup milk (I use coconut milk)
-1/2 cup shredded coconut
-1/2 cup raisins, craisins, and/or chopped nuts of your choice
*Add to mixture. Shape into cookies. Bake at 400 for 12-15 minutes.
**You can also make these into bars. Just spread mixture onto a cookie sheet, bake and cut when cool.
***Mixture is a little wet/sticky so flour your hands if forming cookies.

No new recipes. I haven’t tried out anything except homemade vegetable soup. It turned out…….PRETTY good! Weight loss healthy stuff, I’ll be on the lookout. 😉 LOL
